Just checked the weather and apparently next Thursday the sun is forecast to shine for 26 minutes. Iced latte season it is. This plant-based vanilla iced latte is made with Overherd oat milk powder, a shot of espresso, date syrup, and vanilla extract. Five minutes, one glass, no barista skills needed.
Ingredients
30g Overherd oat milk powder 300ml water 1 shot espresso (chilled for best results) 2 tsp date syrup ½ tsp vanilla extract Ice cubesMethod
1 Add the date syrup and vanilla extract to the bottom of your glass.
2 Fill the glass with ice cubes.
3 Pour in the chilled espresso shot.
4 Mix the 30g Overherd powder with 300ml water until fully dissolved, then pour over the ice and espresso.
5 Give it a final stir and enjoy.
Tips
Chill the espresso first Hot espresso poured directly over ice melts it fast and waters everything down. Make the shot in advance and let it cool, or pop it in the fridge for a few minutes before using.
Date syrup at the bottom Adding the date syrup before the ice means it gets distributed through the drink as you stir rather than sitting on top. Sweeter, more evenly flavoured result.
Make Overherd ice cubesMaking ice cubes out of oat milk means your iced coffee wont get watered down, even on hot days.

Can you make an iced latte with oat milk powder? Yes, and it works better than carton oat milk for this. Overherd powder lets you mix the oat milk to a richer concentration so it holds its own over ice without tasting watered down. Mix cold and pour straight over. No heating needed.
Does the espresso need to be chilled? It doesn't have to be, but it makes a noticeable difference. Hot espresso poured directly over ice melts it quickly and dilutes the drink before you've taken a sip. Make the coffee a few minutes ahead or keep a chilled shot in the fridge if you make these regularly.
Can I make this iced latte recipe without an espresso machine? Yes. Strong instant coffee works as a substitute. Dissolve 1–2 tsp of instant coffee in a small amount of hot water and chill before using. A moka pot also works well. The result won't be identical but it's close enough and significantly cheaper than a coffee machine.

Variations
Brown sugar iced latte Swap date syrup for brown sugar syrup (equal parts brown sugar and hot water, stirred until dissolved and cooled). A little more caramel-forward flavour than date syrup.
Mocha iced latte Add 1 tsp cocoa powder to the glass with the date syrup and vanilla. Stir well to combine before adding the ice and espresso.
Stronger espresso Use a double shot instead of a single for a bolder, more intense result. Adjust the date syrup to taste – you might want more to balance the extra bitterness, or less to let the coffee flavour come through. Up to you.
Maple syrup swap Replace the date syrup with maple syrup for a slightly lighter, cleaner sweetness. Works particularly well with the vanilla extract.
