Lemon Blueberry Overnight Oats Recipe

What's better than oat milk? Not much. But what about oats covered in oat milk aka overnight oats? This plant-based lemon blueberry version is made with Overherd oat milk powder, layered with a blueberry yogurt mixture, and left overnight to do its thing. Prep it the night before. Wake up. Ingredients

Oat layer 80g rolled oats 20g Overherd oat milk powder 170ml water 1½ tbsp maple syrup 1 tsp lemon juice ½ lemon, zested Pinch of salt Blueberry layer 90g blueberries 140g Greek-style plant-based yogurt 1 tsp maple syrup 1 tsp lemon juice To serve 120g fresh blueberries

Method

Make the layers
1 Mix all the oat layer ingredients together in a bowl until fully combined. Refrigerate for one hour.
2 Mix all the blueberry layer ingredients together in a separate bowl until combined.
Assemble
3 Prepare two glass jars. Divide each layer mixture into 4 equal parts.
4 Spoon 1/4 of the blueberry layer into the bottom of each jar, followed by 1/4 of the oat layer, then scatter over half the fresh blueberries. Repeat with the remaining layers on top.
5 Cover and refrigerate overnight. Serve cold straight from the jar.
