Method

Make the pumpkin puree (skip if using tinned)
1 Preheat your oven to 200°C.
2 Halve a butternut squash or small pumpkin and scoop out the seeds. Score in a cross-hatch pattern, drizzle with a little oil, and place cut-side down (skin up) on a baking tray.
3 Roast for 35 - 40 minutes until completely soft.
4 Scoop out the flesh and blend until smooth. Leave to cool before using. This makes far more than you need for one latte. Store the rest in the fridge for up to 4 days (good in pasta sauces or baking) or freeze in portions.

5 If making your own pumpkin spice, mix all the spice ingredients together and store in a small jar. Use ½ tsp for this recipe.
